“A Spanish study of over 1,000 older adults comparing low fat versus two types of Mediterranean diet found that a Mediterranean diet enriched with nuts could be helpful in managing metabolic syndrome, a collection of risk factors for heart disease such as belly fat, high cholesterol, high blood pressure and high blood sugar.”

In addition FDA has approved the following
qualified health claim:

“Scientific evidence suggests but does not prove that eating 1.5 ounces per day of most nuts, such as almonds, as part of a diet low in saturated fat and cholesterol may reduce the risk of heart disease...”

Almond Sesame Salad Dressing and Marinade
Yields about 1/2 cup sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 1/2 teaspoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 1/4 teaspoons sesame oil
  • 1 teaspoon sugar
  • Pinch of salt
  • 1/4 teaspoon garlic powder
  • 1 1/2 tablespoons MaraNatha creamy almond butter
  • 1/3 cup vegetable oil
In a small bowl whisk all ingredients except vegetable oil until smooth. Gradually add the vegetable oil and whisk until well blended. Use as a salad dressing on leaf lettuce with carrots, green onions, and toasted almonds. Use as a marinade for chicken and beef. Place meat in a bowl and add enough sauce to coat. Marinate chicken, beef or tofu in shallow dish turning frequently for 15 – 20 minutes.

Stir Fried Vegetables over noodles with
MaraNatha Almond Butter
Serves 4-6
  • 16 ounce package uncooked linguini noodles
  • 1 tablespoon vegetable oil, divided
  • 2 teaspoons freshly grated ginger
  • 3 cloves garlic, chopped or pressed
  • 1/2 cup almond butter
  • 1 cup vegetable broth
  • 3-4 tablespoons soy sauce (to taste)
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon red chili flakes (to taste)
  • 1 red bell pepper sliced
  • 1 cup snow peas or sugar snap peas,
    strings removed*
  • 1 cup packaged shredded carrots
Cook noodles as directed. Drain and set aside.

Heat 1 teaspoon oil in sauce pan on and sauté ginger and garlic 30 seconds. Add almond butter, vegetable broth, soy sauce, rice vinegar, and chili flakes. Whisk together until smooth. On medium high heat bring to a slight boil, and then reduce heat to low and simmer for 7 minutes.

While sauce is simmering, heat the 2 remaining teaspoons vegetable oil in a large sauté pan or wok until hot. Add bell peppers and snow peas and stir fry on high heat until tender, about 3-5 minutes. Add carrots and fry for 1 minute. Remove from heat, add noodles and sauce to vegetables and toss until well coated. Enjoy

Optional: Stir fry sliced chicken until cooked through before adding bell peppers and snow peas.

Use packaged stir fry vegetable blend in your grocery store’s fresh or freezer section instead of red bell pepper, snow peas, and carrots.

*Sugar snap peas have strings that must be removed before eating. Pinch the very tip of the pea taking hold of the string. Pull the string up the straightest side toward the stem end. Pinch off the stem end and continue pulling down the other side until all string is removed. Note: Some packaged sugar snap peas will have strings removed.
